When I find myself baking a lot, I'm always down for a healthier version of my favorite treat. These mini banana muffins are low in added sugar, have protein thanks to the Greek yogurt, and use fiber full oats in replacement of refined flour.
You can use this recipe to make full size muffins as well. The temperature may need to be increased and they may require a little longer in the oven. This recipe should make about 12 full size muffins as opposed to 28-34 mini muffins.
These muffins come out slightly sweet. If you prefer a sweeter muffin, I recommend doubling the amount of sugar. You can also replace the sugar with whatever sweetener you have on hand, such as honey, maple syrup, or coconut sugar.
