Healthy Mushroom Risotto

This healthy mushroom risotto uses Banza (chickpea) rice, increasing the protein and fiber. For a complete meal, I recommend adding in some cooked chicken breast and pairing with an additional vegetable. This recipe can easily be made vegan by swapping out the chicken broth with vegetable broth, and replacing the butter with a plant based variety.
